Roasted Meats

Pork Loin is, in our opinion, the perfect roasted meat.   One favorite way to roast pork is to stud it with garlic and rosemary, and baste it in good Italian wine and olive oil.   But to roast it with ancho chilies, garlic and oranges is to be transported to a different place and time.
Arni Psito is simply Greek for leg of lamb.    Garlic, oregano, olive oil, plenty of salt and pepper - you don't need anything else.   Maybe some of our roasted potatoes, a nice Greek salad, and a glass of wine.  Simple food on a mythological scale.
There are many ways to roast a chicken.   Our favorite is to rub it inside and out with salt, cumin, and pepper and to stuff it with lemons, limes and garlic.   Aromatic, light.   Very good hot.  Very good cold.
Roast Beef with Root Vegetables is primal stuff.    I recommend it over the "classic" American presentation of Prime Rib and baked potatoes every day of the week and twice on Sundays.   This is succulent, aged beef roasted with root vegetables (potatoes, carrots, onions, sweet potatoes, turnips, and so on) until everything is dark and rich and caramel.   Also works great for hot or cold sandwiches with the vegetables served on the side.
Absolutely, we'll do Roast Turkey.  If you like we'll serve it with sage dressing, sweet potatoes, cranberries, and pumpkin pie.   Is it really ever the wrong time of year for turkey?
