Palm Heart Salad

Palm Heart Salad (the plattered version)

Palm Heart Salad is a sort of composed salad, often served individually plated.   It contains sliced hearts of palm, our marinated red onions, olives, fresh sliced tomato, all resting on butter lettuce (when in season).    Sometimes we add olives.  This light, fresh salad is wonderful on our (admittedly rare) hot summer afternoons.  A somewhat simpler plattered version (with white sweet onions and without the lettuce or olives) appears above.
Our Salade Nicoise is sweet onions, olives, and tomatoes in an achingly light vinaigrette.  One couldn't possibly want more than that.  Could they?
Feeding Frenzy Tabouli is bright and luxurious with a wonderful variety of textures and flavors in each bite.   It's bulghar wheat, tomatoes, spring onions, lemon, and mint.     This salad presents beautifully on a platter.  Yum.
Greek Salads are a favorite around our house, too.   We love 'em with feta cheese,  kalamata olives, pepperoncini, and sweet onions, all in a light vinaigrette.
Our Lentil Salad is pretty exotic - lentils, roasted peppers, feta cheese, kalamata olives, hard-boiled eggs, tomatos, cucumbers - all in this glorious lime-cumin vinaigrette.
